The return of the sun at the Spring Equinox marks the return of outdoor life in Canada. The event is very obvious in the cities, where bars and cafés open their sidewalk terraces, which quickly fill to overflowing. All across the "Belle Province", open-air festivals and cultural and sporting events spring up and multiply. But one of the most traditional sign of the return of good weather is the abundance of fresh maple syrup, everywhere and in everything.
It is no coincidence that Canada chose a maple leaf as its national emblem. The maple is the symbol of the country, which boasts a wide diversity of maple species. But according to the experts, it is the Quebec maple that produces the best syrup. Towards the end of March, meals are organized with the theme of maple syrup, in "Sugar Shacks", small houses built for the manufacture of maple syrup and sugar in the heart of the forest, but also to introduce the curious to the various flavours and uses of this sweet sap.
